Soup season is here and what better way to kick it off than with this rich, creamy and comforting leek & potato soup. I’ve added some fresh greens for a bit of a health kick (to offset all the cream and butter?) and it’s topped with some crispy fried leeks and potato skins. The perfect bowl.
