Fattoush Salad w/ Sumac Pita Chips & Pomegranate

What you need:

The essentials

  • Any type of lettuce leaves,

    Romaine works nicely.

  • Tomatoes

  • Cucumber

  • Parsley (Italian/Flat Leaf > Curly)

  • Red onion

  • Any kind of pita torn into chunks

  • SUMAC

  • Pomegranate

  • Olive oil

  • Lemon

Other Ingredients I used (literally use anything in your fridge): Radishes celery, radicchio, orange pepper, yellow pepper, arugula, fresh mint or feta!

 

Roughly chop all your ingredients (thinly slice the red onion, deseed the pomegranate) and toss in a large bowl. Leave a bunch of finely chopped parsley —and any other herbs you’re using— aside. Heat up some olive oil in a frying pan and when the oil is hot, throw in the pita chips and toss until golden and crispy. Remove from heat and sprinkle generously with sumac. Season with salt and pepper. Allow them to cool off.

Douse the veggies in fresh lemon juice, drizzle with olive oil and toss well. Pour into your serving bowl/platter and gently work in the cooled off pita chips. Top with more fresh herbs, pomegranate seeds, more sumac and a bit more salt and pepper.
